Sure, just set your deadline to sometime Sunday. The Thursday game start time serves as the deadline for that game. If the player forgets to pick the Thursday game they can still pick the others but will lose the Thursday game (unless its a survivor league). You can also set up auto-pick which will automatically pick a team for the player who missed picking the Thursday game.

There is a league option for you to control this, called 'Display Player's Pick', with the options 'After deadline' OR 'After their picked game has started'. The default is 'After Deadline'. Based on what you are asking, you would want to select the later option. This does add stragegy that some managers like, in that if you wait you can see who picked what as the games occur. 

So just to reiterate, once a game starts, if a player picked that game it will show on the Standings page if 1) the league deadline is past, OR 2) you have set the  'After their picked game has started' option and the game is underway or in the past.
